The wine cellar gradually grows, in size and especially in quality. This department must be held under strict control, as it is the glory of a restaurant, but in the same time it imposes a heavy financial burden.
In 1990, by the middle of December, Giovanni sells Enoteca Giovanni and opens the Antinori wine tasting, on Viale Verdi in the heart of Montecatini.
After just three months, the Enoteca has nearly gone bankrupt. Giovanni is requested by his former staff to buy back the restaurant, in march 1991. A long period of heavy work starts, as Giovanni has to run either Enoteca Giovanni and Antinori wine shop.
After seven years, in 1998, Giovanni quits degustazione Antinori and concentrates his action on the Enoteca.
Despite the difficult periods Montecatini and its tourism have gone through during the years, Enoteca Giovanni has kept unchanged its image and presence on the territory, praised by its clientèle (either traditional and constantly renewed) which has appreciated the long years of hard work of Chef Giovanni and his qualified staff.
